These Mini Apple Pies Flaky Hand Pies offer classic comfort in a convenient, portable package, featuring warm cinnamon apples wrapped in a perfectly golden, flaky crust. They are ideal for lunchboxes or a quick, satisfying dessert.
Ingredients
- 4–5 medium (480 g) Granny Smith or Honeycrisp apples, peeled, cored, and diced
- 2 store-bought pie crusts
- 0.25 cup (50 g) granulated sugar
- 1 tsp cinnamon
- 0.25 tsp nutmeg
- 1 tbsp (8 g) all-purpose flour
- 1 large egg
- 1 tbsp water
- Granulated or turbinado sugar, for sprinkling (optional)
Instructions
- Prepare Apples: Peel, core, and dice 4-5 medium (480 g) apples into small, even pieces. In a large bowl, toss the diced apples with 0.25 cup (50 g) granulated sugar, 1 tsp cinnamon, 0.25 tsp nutmeg, and 1 tbsp (8 g) all-purpose flour until evenly coated.
- Roll Out Crusts: On a lightly floured surface, roll out two store-bought pie crusts to about 0.125 inch (3 mm) thick. Use a 4-inch (10 cm) round cutter (or a wide-mouth jar lid) to cut out circles. You will need two circles per hand pie.
- Assemble Hand Pies: Place about 1.5 to 2 tbsp of the apple filling onto the center of one crust circle, leaving a clear border. Moisten the edges of the bottom crust with a little water. Place a second crust circle on top, aligning the edges.
- Seal and Crimp: Press the edges of the top and bottom crusts firmly together to seal the filling. Use a fork to crimp the edges all around. Cut 2-3 small slits on top of each pie with a sharp knife for steam to escape during baking.
- Egg Wash and Bake: In a small bowl, beat 1 large egg with 1 tbsp water to create an egg wash. Brush the tops of the assembled hand pies with the egg wash. Optionally, sprinkle with extra granulated or turbinado sugar. Bake at 375°F (190°C) for 18-22 minutes, or until the crust is golden brown and flaky.

For dietary needs, use gluten-free pie crust or a vegan alternative (plant-based butter, vegan pie crust, plant milk for egg wash). Reduce sugar by using 2-3 tablespoons or maple syrup. If crust tears, ensure dough is cold and lightly floured. For a watery filling, add a bit more flour or cornstarch. If pies brown too fast, cover loosely with foil during the last 5-10 minutes of baking. Consider pre-sliced apples or puff pastry for quicker preparation. A splash of pure vanilla extract can enhance the apple filling’s depth.
