Description

  • 1 medium yellow onion, diced

  • 1 tsp dried oregano
  • 1 tsp fine sea salt
  • 0.5 tsp black pepper
  • 0.5 cup vegetable broth
  • 1 medium lime, zest and juice
  • 0.25 cup fresh cilantro, chopped

Instructions

  1. Brown the Beef: Heat a skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking up clumps, until browned. Drain excess fat from the skillet.
  2. Cook Aromatics and Spices: Reduce heat to medium. Add the diced onion and cook for 5-7 minutes until softened. Stir in the minced garlic and cook for 1 minute. Add chili powder, cumin, smoked paprika, dried oregano, salt, and black pepper; toast for 30 seconds.
  3. Simmer: Return the ground beef to the skillet. Pour in the vegetable broth and add the lime zest. Stir well to combine, bring to a simmer, then cover and cook on low for 10 minutes.
  4. Finish and Serve: Uncover the skillet and stir in the lime juice. Cook for another 3-5 minutes until the liquid has mostly evaporated and the meat is coated in sauce. Garnish with chopped cilantro and a dusting of paprika before serving.

Notes

To avoid dry meat, don’t overcook during the final simmering step and add a splash of extra broth if needed. Store cooled leftovers in the refrigerator for 3-4 days, or freeze in an airtight bag for up to 3 months. For an added layer of flavor, try including a small amount of cocoa powder for depth.
