Description

This Mexican lasagna layers seasoned ground meat, black beans, corn, and a blend of red and green enchilada sauces between corn or flour tortillas, topped with melty cheese for a comforting, quick weeknight meal.


Ingredients

  • 1 lb ground meat (lean ground beef, turkey, or chicken)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (15-oz) can corn, drained
  • 1 (16-oz) can red enchilada sauce
  • 1 (16-oz) can green enchilada sauce
  • 1012 corn or flour tortillas (810 inch)
  • 3 cups (340 g) shredded Monterey Jack or Mexican cheese blend

Instructions

  1. Prep Your Fillings: Brown ground meat, diced onion, and garlic for 8-10 minutes until no pink remains and onion is softened. Drain fat thoroughly. Stir in half of both enchilada sauces, the rinsed black beans, and drained corn. Cook 2-3 minutes until heated through and fragrant. Season to taste.
  2. Sauce the Dish: Spread 0.5 cup (120 ml) combined red and green enchilada sauce at the bottom of a 9×13-inch baking dish.
  3. Layer Like a Pro: Arrange 3-4 tortillas, overlapping, over the sauce. Top with half the meat mixture, 1 cup (115 g) cheese, and 0.25 cup (60 ml) more sauce. Repeat this layer once more.
  4. Final Touch: Place the final 3-4 tortillas over the last meat and cheese layer. Pour over all remaining sauce, then cover generously with remaining cheese.
  5. Bake to Perfection: Bake at 375F (190C) for 25-30 minutes until the cheese is beautifully melted, bubbly, and edges are golden brown. Let it rest for 5-10 minutes before slicing to help layers set.

Notes

For a faster assembly, use pre-cooked shredded chicken or Instant Pot black beans. Ensure ground meat and beans are thoroughly drained to prevent a watery lasagna. If tortillas seem dry, add more sauce between layers.
