Ingredients
- 2 mahi mahi fillets (approx. 6–7 oz each)
- 1/4 cup plain cream cheese (softened)
- 1/2 cup panko breadcrumbs
- 2 tablespoons sun-dried tomatoes in oil (drained and chopped)
- 2 tablespoons fresh basil (chopped)
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon olive oil (divided, plus extra for serving)
- 1/2 teaspoon sea salt (divided)
- 1/4 teaspoon black pepper (divided)
- 1 fresh garlic clove (minced)
- 1 teaspoon lemon juice
Instructions
- Prep Oven and Fillets: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Pat the mahi mahi fillets very dry with paper towels.
- Season Fish Base: Rub each fillet with 1 teaspoon of olive oil, then season generously with half of the salt and pepper. Set aside.
- Prepare Topping Mixture: In a small bowl, combine the softened cream cheese, chopped sun-dried tomatoes, basil, parsley, minced garlic, lemon juice, and remaining salt and pepper. Mix until smooth.
- Apply Topping and Crumb: Spread the cream cheese mixture evenly over the top surface of each fillet. In a separate small bowl, toss the panko breadcrumbs with the remaining 1 teaspoon of olive oil and sprinkle generously over the cream cheese mixture, pressing gently to adhere.
- Bake Fillets: Place the prepared fillets on the lined baking sheet. Bake for 12-18 minutes at 400°F until the fish flakes easily with a fork and the crumb topping is golden brown.
- Garnish and Serve: Carefully remove fillets, transfer to plates, garnish with extra fresh herbs, and drizzle with a little extra virgin olive oil. Serve immediately.
Notes
For a crisp topping, pat fish fillets very dry before adding the mixture. Ensure cream cheese is fully softened for easy mixing by microwaving for 15 seconds if necessary. This recipe also works well with other firm white fish like cod or halibut.
