Description
A high-protein muffin recipe using Kodiak mix, featuring warm spices, diced apples, and a luscious cream cheese swirl for a satisfying, hearty breakfast or snack.
Ingredients
- Kodiak Power Cakes Flapjack and Waffle Mix: 2 cups (240g)
- Milk (any kind): 1 cup (240ml)
- Vegetable oil: 0.25 cup (60ml)
- Unsweetened applesauce: 0.5 cup (120g)
- Large egg: 1
- Medium apple (diced): 1 (150g)
- Ground cinnamon: 1 tsp
- Ground nutmeg: 0.25 tsp
- Cream cheese (softened): 4 oz (113g)
- Granulated sugar: 0.25 cup (50g)
- Vanilla extract: 0.5 tsp
- Powdered sugar (for garnish): 1 tbsp
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 400°F (200°C). Line a standard 12-cup muffin tin with paper liners to prevent sticking.
- Combine Wet Ingredients: In a large mixing bowl, whisk together the milk, egg, vegetable oil, and unsweetened applesauce until smooth.
- Fold in Dry Ingredients and Apples: Add the Kodiak Power Cakes mix, ground cinnamon, and ground nutmeg to the wet mixture. Stir gently with a spatula until just combined. Fold in the finely diced apple. Do not overmix the batter.
- Prepare Cream Cheese Swirl: In a separate small bowl, beat the softened cream cheese with the granulated sugar and vanilla extract until completely smooth and free of lumps.
- Assemble Muffins: Divide about two-thirds of the apple batter evenly among the 12 muffin cups. Add a dollop of cream cheese mixture (approximately 1 teaspoon) on top of the batter in the center of each cup.
- Finish Filling and Swirl: Top with the remaining muffin batter, ensuring the cream cheese layer is covered. Using a skewer or toothpick, gently create a swirl effect by tracing 1-2 times through the batter to marble the cream cheese.
- Bake to Perfection: Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the main body comes out clean. Avoid inserting the toothpick into the cream cheese center.
- Cool and Serve: Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Dust the tops lightly with powdered sugar before serving.
Notes
To achieve fluffy muffins, mix the batter gently only until the ingredients are combined, as overmixing can lead to a dense, tough texture. Ensure the cream cheese is fully softened for a smooth swirl. Store leftover muffins in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
