Description

This recipe elevates classic Rice Krispie treats by adding brown butter for a nutty flavor base and a miso caramel swirl for savory-sweet complexity and umami.


Ingredients

  • 45g (3 tablespoons) unsalted butter
  • 280g (5 cups) mini marshmallows
  • 150g (6 cups) Rice Krispies cereal
  • 100g (1/2 cup) granulated sugar
  • 60ml (1/4 cup) heavy cream
  • 15g (1 tablespoon) white miso paste
  • 2.5ml (1/2 teaspoon) vanilla extract
  • Flaky sea salt, for garnish

Instructions

  1. Prepare Pan: Line a 9×9 inch baking pan with parchment paper and lightly grease.
  2. Brown Butter: Melt butter in a large pot over medium-low heat, cooking until it turns amber and smells nutty (about 5-7 minutes). Remove from heat.
  3. Melt Marshmallows: Add mini marshmallows to the brown butter and stir until smooth and completely melted. Remove from heat immediately.
  4. Add Vanilla: Stir the vanilla extract into the marshmallow mixture until combined.
  5. Make Miso Caramel: In a separate pan, cook sugar and water over medium heat until amber. Remove, then whisk in heavy cream and miso paste until smooth.
  6. Combine Cereal and Layer: Fold cereal into the marshmallow mixture. Spread 2/3 of the mixture into the prepared pan and drizzle half of the caramel over it.
  7. Swirl and Press: Spread the remaining cereal mixture on top. Drizzle with the remaining caramel and swirl gently. Press firmly and evenly into the pan.
  8. Cool and Serve: Let cool completely at room temperature for 1-2 hours. Cut into squares and sprinkle with flaky sea salt.

Notes

Store in an airtight container at room temperature for up to 3 days; avoid refrigeration as it can make treats hard. To get clean cuts, use a sharp knife lightly oiled with neutral cooking spray or butter.
