Ingredients

  • 500 g beef sirloin steak, trimmed
  • 15 ml olive oil
  • 30 ml lime juice
  • 2 cloves garlic, minced
  • 5 g cumin
  • 5 g smoked paprika
  • 3 g kosher salt
  • 2 g black pepper
  • 8 corn tortillas
  • 150 g grilled corn kernels
  • 30 ml plant-based mayonnaise
  • 5 ml chipotle adobo sauce
  • 30 g cotija cheese
  • 15 g cilantro, chopped
  • 30 g red onion, diced
  • 1 jalapeño, sliced (optional)
  • 150 g avocado, mashed
  • 15 ml Greek yogurt (optional)
  • 5 ml lime zest
  • 5 g toasted pepitas
  • Lime wedges

Instructions

  1. Marinate Steak: Whisk olive oil, lime juice, garlic, cumin, paprika, salt, and pepper. Coat steak.
  2. Rest & Marinate: Marinate steak at room temperature for 15 minutes.
  3. Grill Corn: Grill corn kernels until charred, about 30 seconds per side.
  4. Grill Steak: Grill steak 4 minutes per side for medium-rare.
  5. Rest Steak: Rest steak for 5 minutes.
  6. Slice Steak: Slice steak against the grain.
  7. Make Chipotle Mayo: Combine mayonnaise and chipotle adobo sauce.
  8. Make Avocado Crema: Blend avocado, yogurt (optional), lime juice, zest, and salt.
  9. Warm Tortillas: Warm tortillas on the grill.
  10. Assemble Tacos: Layer steak, corn, cheese, onion, cilantro, jalapeño, mayo, and crema on tortillas.
  11. Garnish & Serve: Sprinkle with pepitas and serve with lime wedges.
