Description

Joy Behar lasagna recipe with layers of noodles, ricotta, mozzarella, and marinara. A hearty Italian-style family dinner classic.


Ingredients

  • 1 box (8 oz.) lasagna noodles, oven-ready or no-boil
  • 1 ½ lbs. ground beef or Italian sausage
  • 1 lb. ricotta cheese or cottage cheese
  • 28 oz. can crushed tomatoes
  • 6 oz. can tomato paste
  • 1 lb. mozzarella cheese, shredded or sliced
  • 1 cup Parmesan cheese, grated, plus ¼ cup for garnish
  • 2 cloves garlic
  • 1 cup onion, chopped
  • ¼ cup parsley, chopped
  • ½ cup fresh basil, chopped
  • ¼ cup oregano
  • 2 tsp. sea salt
  • ¾ tsp. black pepper
  • 2 tbsp. olive oil
  • 1 egg, beaten

Instructions

  1. Prep the noodles: Preheat oven to 400°F. Soak noodles in hot water for 20 minutes or cook according to package.
  2. Make the sauce: Heat 2 tbsp. olive oil, sauté onion and garlic. Add crushed tomatoes, tomato paste, oregano, basil, salt, pepper. Simmer 20 minutes.
  3. Cook the meat: Brown ground beef or sausage until fully cooked. Drain fat and stir into tomato sauce. Use zucchini or spinach for vegetarian.
  4. Prepare cheese filling: Mix ricotta or cottage cheese with 1 cup Parmesan, beaten egg, parsley, salt, and pepper.
  5. Layer the lasagna: Spread sauce, add noodles, ricotta mixture, mozzarella, and repeat layers. Top with Parmesan.
  6. Bake: Cover with foil and bake 25 minutes. Remove foil, bake 10 minutes until bubbly and golden.
  7. Rest: Let sit for 15 minutes before slicing for clean layers.

Notes

For a lighter version, use cottage cheese instead of ricotta. For vegetarian, substitute zucchini or spinach for the meat. This dish freezes well and tastes better the next day.
