Description
This recipe delivers the iconic flavor of Char Siu, traditionally made with pork, but adapted for chicken thighs. It features a beautifully caramelized glaze and tender, juicy meat, offering a quicker and equally delicious experience.
Ingredients
- 1000 g chicken thighs, bone-in skin-on
- 60 ml low-sodium soy sauce
- 45 ml hoisin sauce
- 30 ml honey
- 30 g light brown sugar
- 5 g Chinese five-spice powder
- 10 g garlic, minced
- 10 g ginger, minced
- 15 ml rice vinegar
- 10 ml toasted sesame oil
- 5 ml chili paste (optional)
- 2 scallions, thinly sliced
- 1 Tbsp toasted sesame seeds
- 1/2 cucumber, thinly sliced
Instructions
- Prepare Chicken: Score chicken skin and pat dry.
- Make Glaze: Whisk together soy sauce, hoisin, honey, sugar, spices, garlic, ginger, vinegar, and sesame oil.
- Marinate Chicken: Coat chicken with glaze and marinate for 10 minutes.
- Roast Chicken: Roast at 200°C (390°F) for 20 minutes, flip, and brush with glaze.
- Continue Roasting: Roast for 15 more minutes, until internal temperature reaches 75°C (165°F).
- Rest & Reduce Glaze: Rest chicken for 5 minutes, then reduce glaze in a saucepan.
- Slice & Serve: Slice chicken, drizzle with glaze, and garnish.
Notes
Scoring the chicken skin helps the glaze penetrate and ensures even crisping. Using a wire rack promotes all-over caramelization during roasting.
