Ingredients
- 2–2.5 lbs boneless, skinless chicken thighs or breasts
- 2 lbs baby red or Yukon Gold potatoes, scrubbed and quartered
- 6–8 cloves garlic, minced fresh
- 4 tablespoons unsalted butter, cut into 4–6 pieces
- 1 cup low-sodium chicken broth
- ½ cup freshly grated Parmesan cheese, plus extra for serving
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped (optional)
- Pinch of red pepper flakes (optional)
- Squeeze of fresh lemon juice (optional)
Instructions
- Step: Trim fat from chicken and pat dry. Season chicken with ½ tsp salt, ¼ tsp pepper, ¼ tsp onion powder, ¼ tsp oregano, and ¼ tsp thyme.
- Step: Scrub and quarter potatoes. Toss with remaining ½ tsp salt, ¼ tsp pepper, ¼ tsp onion powder, ¼ tsp oregano, ¼ tsp thyme, and ½ tsp smoked paprika. (Optional: add red pepper flakes).
- Step: Mince 6-8 cloves fresh garlic. Layer seasoned potatoes in the slow cooker, then arrange seasoned chicken on top.
- Step: Scatter minced garlic over chicken and potatoes. Pour 1 cup chicken broth over everything. Dot with 4 tablespoons unsalted butter pieces.
- Step: Cover and cook on LOW for 6-8 hours (or HIGH for 3-4 hours). Avoid lifting the lid frequently. Chicken should be fork-tender (165°F/74°C) and potatoes tender.
- Step: Once cooked, gently stir in ½ cup freshly grated Parmesan cheese until melted and a creamy sauce forms. (Optional: add a squeeze of fresh lemon juice.) Garnish with 2 tablespoons chopped fresh parsley and extra Parmesan before serving warm.
Notes
Chicken thighs are recommended for better moisture, but breasts work well if cut into larger, even chunks. Freshly grated Parmesan cheese yields a much smoother and creamier sauce than pre-shredded varieties. If sauce is too thin, stir well to emulsify the butter and cheese.
