Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar (packed)
  • 2 large eggs
  • 1 cup milk (whole or 2%)
  • 0.5 cup vegetable oil (or melted butter)
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • 2 cups powdered sugar
  • 34 tablespoons milk (or heavy cream)
  • 2 tablespoons melted butter
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract

Instructions

  1. Prep Oven & Pan: Preheat oven to 350F (175C). Lightly grease and flour a 9×13 inch baking pan.
  2. Mix Cake Batter: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. In a separate medium bowl, combine the eggs, milk, vegetable oil, and vanilla extract. Gradually add the wet ingredients to the dry, mixing until just combined.
  3. Assemble Cinnamon Swirl: Pour half of the batter into the prepared pan and spread evenly. In a small bowl, whisk together the 0.5 cup brown sugar, 2 teaspoons ground cinnamon, and 2 tablespoons melted butter. Sprinkle half of this mixture evenly over the batter. Dollop the remaining cake batter over the cinnamon mix, then gently spread it out. Sprinkle the remaining cinnamon mixture over the top.
  4. Bake Cake: Place the pan in the preheated oven and bake for 30-35 minutes, until the top is golden brown and a wooden skewer inserted into the center comes out clean. Let it cool in the pan on a wire rack for 10-15 minutes.
  5. Prepare Glaze: While the cake is cooling, whisk together the powdered sugar, 3-4 tablespoons milk, 2 tablespoons melted butter, 1 teaspoon ground cinnamon, and 0.5 teaspoon vanilla extract until smooth and pourable.
  6. Glaze & Serve: Pour the warm glaze evenly over the slightly warm cake. Let the glaze set for a few minutes until it’s slightly firm to the touch before slicing and serving. (For an extra moist cake, poke small holes in the warm cake with a fork before glazing.)

Notes
