Description
A simple and delicious homemade peach preserves recipe using fresh ripe peaches. This no-pectin method creates a sweet, chunky spread, featuring an optional non-alcoholic bourbon flavoring for a sophisticated gourmet touch.
Ingredients
- 10 large peaches, ripe
- 1/2 cup fresh lemon juice
- 1 1/2 cups sugar
- 1 tsp salt
- 1 tsp cornstarch
- 1/3 cup non-alcoholic bourbon flavoring
- 1 stick + 2 tbsp unsalted butter, softened
- 1/2 tsp cinnamon
- 2 tbsp maple syrup
- 1/2 tbsp non-alcoholic bourbon flavoring
Instructions
- Step: Bring a large saucepan of water to a slight boil and fill a large bowl with ice and water; set the bowl aside.
- Step: Place a few peaches in hot water for about 2 minutes to loosen the skin, then immediately transfer them to the cold water for about 30 minutes.
- Step: Peel the skin off the peaches by hand and set them aside; repeat for all peaches.
- Step: Slice the peaches, discard the pits, and place slices in a large bowl with lemon juice, 1 1/2 cups of sugar, and salt; stir and cover with plastic wrap for at least 1 hour at room temperature.
- Step: Pour the peaches and liquid into a large pot and bring to a boil on medium heat for about 45 minutes, stirring intermittently.
- Step: Reduce heat slightly, mash the peaches with a potato masher leaving slight chunks, and stir in the non-alcoholic bourbon flavoring.
- Step: Dissolve cornstarch in 1 teaspoon of the peach liquid in a small ramekin, stir it into the preserves, bring to a full rolling boil for 10 minutes, then turn heat to low for 5 minutes before removing from heat to cool completely.
- Step: Ladle the cooled preserves into clean half-pint jars, close tightly with lids, and refrigerate until ready to serve.
- Step: Combine the softened butter, maple syrup, cinnamon, and non-alcoholic bourbon flavoring in a medium bowl and stir until smooth; use to top warm biscuits.
Notes
For extra flavor, you can add an additional teaspoon of non-alcoholic bourbon flavoring to individual jars before sealing. This recipe pairs perfectly with homemade buttermilk biscuits.
