Description

This homemade noodle recipe offers a vibrant golden hue and fresh herby aroma, perfect for a wholesome family meal. It’s an easy and delicious way to enjoy fresh pasta on busy weeknights.

Ingredients

  • 2 cups (240g) all-purpose flour
  • 2 large eggs
  • 1 teaspoon (5g) turmeric powder
  • 0.25 cup (10g) fresh chives, finely chopped (or 1 tablespoon dried chives)
  • 0.5 teaspoon (3g) salt
  • Optional: dash of garlic powder
  • Optional: 1 tablespoon olive oil

Instructions

  1. Mix The Dough: In a large bowl, combine flour, turmeric, and salt. Add eggs. Mix with a fork or hands for 2-3 minutes until a shaggy dough forms. If too dry, add water 1 teaspoon at a time until it comes together.
  2. Knead To Perfection: Turn dough onto a lightly floured surface. Knead steadily for 7-10 minutes until smooth, elastic, and springy.
  3. Rest For Relaxation: Form dough into a ball. Cover tightly with plastic wrap or a damp cloth and let rest at room temperature for at least 30 minutes to relax gluten.
  4. Roll And Cut: Divide dough into 2-3 portions. On a generously floured surface, roll each portion very thinly (dime-thickness) with a rolling pin.
  5. Add Chive Ribbons And Slice: Lightly brush rolled dough with a tiny bit of water, then sprinkle generously with chives. Gently press chives onto dough. Fold dough loosely into thirds or roll it up like a jelly roll. Slice into desired noodle width using a sharp knife. Keep cut noodles lightly floured to prevent sticking.
  6. Cook Fresh Noodles: Bring a large pot of generously salted water to a rolling boil. Carefully add fresh noodles. Cook for 2-4 minutes until they float to the top and are al dente.

Notes

The resting step is crucial for easy rolling and tender noodles. Keep your work surface and noodles lightly floured to prevent sticking. For lower sodium, reduce salt in boiling water. Consider adding a dash of garlic powder and 1 tablespoon olive oil to the dough for extra flavor and suppleness, or 1 tablespoon finely puréed spinach for extra nutrients and color.
