Instructions

  1. Prepare the Crust: Combine 1.5 cups crushed graham cracker crumbs, 0.5 cup melted unsalted butter, and 0.25 cup granulated sugar in a medium bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in a preheated 350°F (175°C) oven for 8-10 minutes until lightly golden and fragrant. Cool on a wire rack.
  2. Make the Cheesecake Filling: In a large bowl, using an electric mixer, beat 32 oz softened cream cheese on medium speed for 2-3 minutes until completely smooth and lump-free. Gradually add 1.5 cups granulated sugar, beating until just combined. Add 4 large room-temperature eggs one at a time, mixing on low speed only until each is incorporated, scraping down the sides of the bowl. Stir in 0.5 cup sour cream and 1 teaspoon pure vanilla extract.

Create the Raspberry Swirl: In a small saucepan, gently heat 1.5 cups fresh raspberries, 2 tablespoons powdered sugar (if using), and 1 tablespoon lemon juice over medium-low heat for 3-5 minutes until the raspberries soften and release their juices.
