Ingredients
- 8 medium fresh apples (about 2 kg), a mix of sweet and tart

- 0.5–0.75 cup brown sugar (100–150 g), or maple syrup, to taste
- 10–12 cups water (2.5–3 liters)
- 0.5 cup cranberry or pomegranate juice (120 ml, optional, for a festive twist)
- 1–2 Tbsp freshly grated ginger (10–20 g, optional, for a spicy kick)
- 1 tsp vanilla extract (optional, for a creamy note)

Instructions
- Prep Apples: Wash and quarter about 8 medium apples; no need to peel or core them. Place these into a large 8-quart stockpot.
- Add Spices: To the pot, add 4-6 cinnamon sticks, 1 Tbsp whole cloves, 3-4 star anise, and the orange peel.
- Cover with Water: Pour in 10-12 cups of water, ensuring all the apples are covered by about 1 inch.
- Simmer Gently: Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer gently for 2-3 hours, or until the apples are very soft and mashable.
- Mash Apples: Carefully mash the softened apples in the pot with a potato masher, releasing more juice and flavor into the liquid. If apples are stubborn, simmer for another 30 minutes until soft.
- Strain Mixture: Ladle the mixture through a fine-mesh sieve or cheesecloth-lined colander, pressing solids firmly to extract all liquid. Discard the spent apple pulp and spices.
- Return and Sweeten: Return the strained homemade apple cider to the clean pot. Add 0.5-0.75 cup brown sugar or your chosen sweetener to taste.
- Final Simmer: Simmer for another 15-20 minutes over low heat, allowing the flavors to meld and the cider to warm through completely.
