Description

This easy homemade apple cider recipe features a comforting blend of apples and warm spices like cinnamon, cloves, and star anise, perfect for cozy evenings or holiday gatherings. It’s a simple, family-friendly beverage that fills your home with an inviting autumnal aroma.

Ingredients

  • 8 medium fresh apples (about 2 kg), a mix of sweet and tart
  • 46 large cinnamon sticks
  • 1 Tbsp whole cloves (5 g)
  • 34 whole star anise (optional)
  • Peel from 1 whole orange (about 15 g)
  • 0.50.75 cup brown sugar (100150 g), or maple syrup, to taste
  • 1012 cups water (2.53 liters)
  • 0.5 cup cranberry or pomegranate juice (120 ml, optional, for a festive twist)
  • 12 Tbsp freshly grated ginger (1020 g, optional, for a spicy kick)
  • 1 tsp vanilla extract (optional, for a creamy note)
  • 34 whole cardamom pods (optional, for an exotic aroma)

Instructions

  1. Prep Apples: Wash and quarter about 8 medium apples; no need to peel or core them. Place these into a large 8-quart stockpot.
  2. Add Spices: To the pot, add 4-6 cinnamon sticks, 1 Tbsp whole cloves, 3-4 star anise, and the orange peel.
  3. Cover with Water: Pour in 10-12 cups of water, ensuring all the apples are covered by about 1 inch.
  4. Simmer Gently: Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer gently for 2-3 hours, or until the apples are very soft and mashable.
  5. Mash Apples: Carefully mash the softened apples in the pot with a potato masher, releasing more juice and flavor into the liquid. If apples are stubborn, simmer for another 30 minutes until soft.
  6. Strain Mixture: Ladle the mixture through a fine-mesh sieve or cheesecloth-lined colander, pressing solids firmly to extract all liquid. Discard the spent apple pulp and spices.
  7. Return and Sweeten: Return the strained homemade apple cider to the clean pot. Add 0.5-0.75 cup brown sugar or your chosen sweetener to taste.
  8. Final Simmer: Simmer for another 15-20 minutes over low heat, allowing the flavors to meld and the cider to warm through completely.

Notes

Don’t over-sweeten initially; always taste the strained homemade apple cider before adding sugar, and adjust gradually. Ensure apples are fully softened before mashing for maximum juice extraction and a richer flavor. Don’t skip the straining step for a clear, smooth, and enjoyable homemade apple cider. For a low-carb version, use a sugar-free sweetener. Serve with an extra cinnamon stick for garnish. Store chilled in an airtight container for up to 5 days.
