Ingredients

  • 500 g (1.1 lb) lean ground beef, browned
  • 2 Tbsp (30 ml) extra-virgin olive oil
  • 1 large onion (≈150 g / 5.3 oz), diced
  • 2 cloves garlic, minced
  • 2 medium carrots (≈150 g / 5.3 oz), diced
  • 2 celery stalks (≈100 g / 3.5 oz), diced
  • 1 medium potato (≈200 g / 7 oz), cubed
  • 1 cup (150 g) frozen peas
  • 1 cup (150 g) canned diced tomatoes, drained
  • 4 cups (960 ml) low-sodium vegetable broth
  • 1 cup (240 ml) water
  • 1 tsp (5 ml) smoked paprika
  • 1 tsp (5 ml) ground cumin
  • 0.5 tsp (2.5 ml) ground black pepper
  • 1 tsp (5 ml) sea salt, plus to taste
  • 1 bay leaf
  • 1 tsp lemon zest
  • 2 Tbsp (30 g) plain Greek yogurt
  • 0.25 cup (15 g) fresh parsley, chopped
  • Optional: pinch of red-pepper flakes

Instructions

  1. Bloom Aromatics: Heat oil in a pot.
  2. Brown Beef: Cook beef until browned, drain fat.
  3. Sauté Vegetables: Sauté onion, garlic, carrots, and celery until softened.
  4. Toast Spices: Add paprika, cumin, pepper, and salt; cook for 1 minute.
  5. Simmer Soup: Add potato, tomatoes, broth, and water; simmer for 20-25 minutes.
  6. Add Finishing Touches: Stir in peas and red pepper flakes (if using).
  7. Brighten with Lemon: Remove bay leaf and stir in lemon zest.
