Description

This Beef and Lentil Soup is a one-pot wonder! Loaded with hearty beef, protein-packed lentils, and fresh vegetables, it’s perfect for cold days. Easy to make, nutritious, and delicious—ideal for family dinners or meal prep.


Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 lb ground beef or diced stew meat
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green or brown lentils, rinsed
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp cumin
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup kale or spinach, chopped (optional)
  • Fresh parsley for garnish

Instructions

  1. Step: Brown the beef in a large pot; drain excess fat if needed.
  2. Step: Sauté onion, carrots, celery, and garlic until tender.
  3. Step: Add lentils, diced tomatoes, beef broth, thyme, cumin, bay leaf, salt, and pepper. Bring to a boil.
  4. Step: Reduce heat and simmer for 30-40 minutes until lentils are tender.
  5. Step: Stir in kale or spinach during the last 5 minutes (optional).
  6. Step: Remove bay leaf, serve, and garnish with parsley.

Notes

For a vegetarian option, replace beef with additional lentils and use vegetable broth. Adjust spices to your preference.
