Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 lb ground beef or diced stew meat
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 1 cup green or brown lentils, rinsed
- 6 cups beef broth
- 1 tsp dried thyme
- 1 tsp cumin
- 1 bay leaf
- Salt and pepper to taste
- 1 cup kale or spinach, chopped (optional)
- Fresh parsley for garnish
Instructions
- Step: Brown the beef in a large pot; drain excess fat if needed.
- Step: Sauté onion, carrots, celery, and garlic until tender.
- Step: Add lentils, diced tomatoes, beef broth, thyme, cumin, bay leaf, salt, and pepper. Bring to a boil.
- Step: Reduce heat and simmer for 30-40 minutes until lentils are tender.
- Step: Stir in kale or spinach during the last 5 minutes (optional).
- Step: Remove bay leaf, serve, and garnish with parsley.
Notes
For a vegetarian option, replace beef with additional lentils and use vegetable broth. Adjust spices to your preference.
