Instructions

  3. Cook to Hard Crack Stage: Place the saucepan over medium-high heat. Insert a candy thermometer and cook without stirring until the temperature reaches 150-155°C (300-310°F). Brush down any sugar crystals from the sides of the pan with a wet pastry brush if necessary.
