Description
This recipe transforms classic green bean casserole using fresh, tender-crisp green beans for a creamy, savory center and irresistible crispy onion topping. It’s a family-friendly upgrade perfect for an easy dinner or comforting celebration.
Ingredients
- 2 pounds fresh green beans, trimmed and snapped
- 1 can (10.5 ounces) cream of mushroom soup (or quality canned/dairy-free alternative)
- 0.5 cup milk (dairy or unsweetened plant-based)
- 1 cup shredded cheddar or parmesan cheese, divided
- 1.5 cups crispy fried onions, divided
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper
- 0.25 teaspoon salt
- A pinch of nutmeg (optional, for enhancing creaminess)
- A pinch of smoked paprika (optional, for subtle savory depth)
Instructions
- Prep Green Beans: Snap tough ends off fresh green beans. Blanch in boiling water for 3-5 minutes until tender-crisp and bright green, then immediately transfer to an ice bath to halt cooking. Drain very well.
- Mix Creamy Sauce: In a large mixing bowl, whisk together cream of mushroom soup, milk, salt, black pepper, and garlic powder until smooth. Stir in 0.5 cup of the shredded cheese.
- Combine And Bake: Gently fold the blanched, well-drained green beans into the creamy sauce. Pour this mixture into a 9×13 inch baking dish. Bake at 375°F (190°C) for 20-25 minutes, or until edges are bubbly and sauce is slightly thickened.
- Add Crispy Onions: Sprinkle the remaining 0.5 cup cheese and the 1.5 cups crispy fried onions evenly over the top of the casserole. Bake for another 10-15 minutes, or until onions are golden brown and cheese is melted and bubbly (tent with foil if onions brown too fast).
- Serve Hot: Let the finished casserole rest for a few minutes before serving to allow the sauce to set slightly.
Notes
Ensure blanched green beans are very well-drained to prevent a watery sauce. Don’t add all crispy onions too early, as they can burn and become bitter. Season the creamy sauce generously before adding the beans for best flavor. For a lighter sauce, use low-fat or unsweetened plant-based milk. Avoid overcooking green beans during blanching as they will cook more in the oven.
