Description

Our fresh fruit salad recipe Rainbow Citrus Shine delivers a burst of vibrant flavor and natural sweetness, perfect for busy weeknight dinners or a healthy breakfast. This family-friendly recipe makes healthy eating incredibly easy and appealing for everyone.

Ingredients

  • 1 large orange (cara cara or navel), peeled & segmented (1 cup/160 g)
  • 1 large grapefruit (ruby red), peeled & segmented (1 cup/180 g)
  • 34 kiwis, peeled & sliced (1 cup/180 g)
  • 1 cup (150 g) blueberries, washed
  • 1 cup (150 g) strawberries, hulled & halved
  • 2 cups (300 g) pineapple, fresh, cored & diced (or quality canned in juice, drained)
  • 1 cup (150 g) green grapes, washed (or red grapes)
  • 2 tablespoons (30 mL) fresh lime juice
  • 2 tablespoons (30 mL) fresh orange juice
  • 12 tablespoons (1530 mL) honey (or maple syrup for vegan option)

Instructions

  1. Prep Your Fruits: Wash fruits. Segment oranges and grapefruits, removing seeds and white pith. Slice kiwis. Hull and halve strawberries. Dice pineapple into bite-sized chunks. Keep blueberries and grapes whole.
  2. Combine the Rainbow: In a large mixing bowl, gently combine all prepared fruits, aiming for even color distribution.
  3. Whisk the Dressing: In a small bowl, whisk fresh lime juice, orange juice, and honey (if using) until combined. (If honey is thick, gently warm 10-15 seconds in microwave to mix easily.)
  4. Dress and Serve: Pour citrus dressing over fruit. Gently toss to coat until fruits glisten. Serve immediately for freshest taste and crisp texture, or chill up to 30 minutes to let the flavors meld beautifully.

Notes

Consider organic fruits for peak flavor. For quick meals, use pre-cut pineapple or a citrus juicer. Handle overripe fruit gently to avoid mushiness. If the salad is not sweet enough, add more honey or use sweeter fruits. This recipe is naturally gluten-free, and maple syrup can be used for a vegan option. Chill up to 30 minutes before serving for melded flavors.
