Ingredients
- 1 head (300g) Romaine Lettuce, crisp, chopped
- 2 medium (300g) Tomatoes, ripe, diced
- 1 large (200g) Cucumbers, firm, diced
- 1 medium (150g) Bell Peppers, any color, diced
- 4–5 small (50g) Radishes, thinly sliced
- 2 pieces Pita Bread, day-old preferred, cut into triangles (or gluten-free pita for dietary needs)
- 0.5 cup (15g) Fresh Parsley, chopped
- 0.25 cup (8g) Fresh Mint, chopped
- 0.5 cup (120ml) Olive Oil for dressing, plus 1 Tbsp (15ml) for pita
- 0.25 cup (60ml) Lemon Juice, freshly squeezed (or 2 Tbsp good quality vinegar if no fresh lemons on hand)
- 2 tsp (4g) Sumac
- 0.5 tsp (3g) Salt, or to taste
- 0.25 tsp (1g) Black Pepper, freshly ground, or to taste
- 0.5 cup (80g) Pomegranate Shards, fresh arils
Instructions
- Prep The Veggies: Wash and chop all vegetables into bite-sized pieces, aiming for uniform size for even bites and beautiful presentation.
- Toast The Pita: Cut pita bread into small triangles. Lightly brush with 1 Tbsp (15ml) olive oil. Toast in a large skillet over medium heat, in an air fryer, or in the oven (approx. 3-5 minutes at 375F/190C) until golden brown and crisp. If browning too quickly, reduce heat or oven temperature.
- Make The Dressing: In a small bowl, whisk together 0.5 cup (120ml) olive oil, 0.25 cup (60ml) fresh lemon juice, 2 tsp (4g) sumac, 0.5 tsp (3g) salt, and 0.25 tsp (1g) pepper for 30-60 seconds until well combined and slightly emulsified. Taste and adjust seasonings as desired. For a lighter dressing, increase lemon juice and reduce olive oil slightly.
- Combine And Dress: In a large salad bowl, gently toss all chopped vegetables, toasted pita, and fresh herbs (parsley, mint). Pour the dressing over and toss to coat evenly. Add the sumac-purple pomegranate shards right before serving. Do not dress the salad until just before serving to prevent soggy pita.
