Description

A creamy, flavor-packed egg boil featuring hard-boiled eggs, potatoes, corn, shrimp, and sausage in a rich sauce infused with smoked paprika and roasted garlic. This one-pot meal is perfect for a satisfying family dinner.


Ingredients

  • 68 large eggs
  • 1 lb (500g) baby potatoes, scrubbed clean
  • 2 mini corn cobs, or 2 regular cobs cut in thirds
  • 10 oz (300g) beef or chicken sausage, sliced
  • 1 lb (450g) large shrimp, peeled and deveined
  • 8 tbsp (1 stick) unsalted butter, divided
  • 1/2 cup (120ml) vegetable broth
  • 1 head of garlic, roasted
  • 1/2 cup (120ml) heavy cream
  • 1 tbsp fresh lemon juice
  • Fresh parsley, for garnish
  • Spice Blend: 2 tbsp smoked paprika, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tsp cayenne pepper, 1 tsp dried oregano, 1 tsp dried thyme, 1 tsp black pepper, 1 tsp fine sea salt

Instructions

  1. Roast Garlic: Preheat oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 40-50 minutes until soft. Set aside to cool.
  2. Hard Boil Eggs: Place eggs in a pot, cover with cold water, bring to a rolling boil, then remove from heat, cover, and let stand for 9-12 minutes. Transfer immediately to an ice bath for 5 minutes; peel.
  3. Cook Potatoes and Corn: Boil baby potatoes in salted water for 15-20 minutes, or until tender. Add corn for the last 5-7 minutes of cooking. Drain thoroughly.
  4. Sear Sausage and Shrimp: Melt 1 tbsp butter in a large pot over medium-high heat. Sear sliced sausage until browned (5-7 minutes), then remove. Cook shrimp for 2-3 minutes per side until pink; remove.
  5. Prepare Spiced Butter Sauce: Reduce heat to medium. Add remaining butter to the pot with the spice blend. Cook for 1 minute until fragrant. Stir in vegetable broth, scraping up browned bits from the pot bottom.
  6. Blend Roasted Garlic Cream: Squeeze roasted garlic cloves into a blender. Add heavy cream, 1.5 tsp smoked paprika, and lemon juice. Blend until smooth and creamy.
  7. Combine and Serve: Add cooked potatoes, corn, sausage, shrimp, and peeled eggs to the spiced butter sauce. Toss gently and simmer for 2-3 minutes. Serve warm, drizzled with the cream sauce and garnished with parsley.

Notes

Roasting the garlic mellows its sharpness and creates a sweet base for the cream sauce. Cook spices in butter for 60 seconds to enhance flavor depth. Use high-quality ingredients for the best results. To adjust heat, vary the amount of cayenne pepper. Avoid overcooking the shrimp and hard-boiled eggs during reheating.
