Ingredients
- 250g ground chicken or beef
- 30–35 square wonton wrappers
- 1.5 liters (6 cups) chicken or vegetable broth
- 3 tbsp soy sauce, divided
- 2 tsp toasted sesame oil, divided
- 1 tbsp fresh ginger, grated, divided
- 2 cloves garlic, minced, divided
- 3 green onions, white/light green parts for filling, green tops for garnish
- 3 tbsp smooth peanut butter
- 2 tbsp chili crisp
- 2 tbsp rice vinegar
- 1 tsp granulated sugar
- 2–3 tbsp hot water
- Pinch white pepper
- Sesame seeds (optional garnish)
Instructions
- Mix Filling Ingredients: Combine ground chicken, half of the garlic and ginger, white parts of green onions, 1 tbsp soy sauce, 1 tsp sesame oil, and white pepper in a bowl; mix gently to combine.
- Assemble Wontons: Place about 1 tsp filling in the center of a wrapper. Moisten edges with water, fold into a triangle, and press firmly to seal. Bring the two bottom corners together and overlap slightly, sealing with a dab of water to form an ingot shape.
- Prepare Broth Base: In a large pot, combine the chicken broth, remaining garlic and ginger, 1 tbsp soy sauce, and 1 tsp sesame oil. Bring the broth to a gentle simmer.
- Make Peanut Drizzle: Whisk together peanut butter, chili crisp, 1 tbsp soy sauce, sugar, and rice vinegar in a small bowl. Gradually whisk in hot water, 1 tablespoon at a time, until the sauce is smooth and pourable.
- Cook Wontons: Carefully add the assembled wontons to the simmering broth (in batches if necessary). Cook for 4-6 minutes, or until the wontons float to the surface and are cooked through.
- Serve and Garnish: Ladle the hot soup and several wontons into bowls. Drizzle generously with the spiced peanut sauce and garnish with the reserved green onion tops and sesame seeds.
Notes
Keep wonton wrappers covered with a damp cloth or plastic wrap while working to prevent drying out. To avoid tough wontons, mix the meat filling gently and avoid overworking it. Cook wontons in batches to ensure they cook evenly and prevent sticking.
