Instructions

  1. Sauté Corn: Heat a large 10-inch skillet over medium-high heat. Add 1 Tbsp oil and 450 g corn kernels. Cook, stirring occasionally, until slightly charred and tender, about 5-7 minutes.
  2. Prepare Creamy Sauce: While corn cooks, in a small bowl, whisk together 0.5 cup mayonnaise, 0.25 cup sour cream, 2 Tbsp lime juice, 1 tsp lime zest, and a pinch of salt and pepper until smooth and well combined.
  3. Combine Ingredients: Remove corn from heat. Stir in the creamy sauce, 0.25 cup Cotija cheese, and 3 Tbsp fresh cilantro. Toss gently until corn is evenly coated and warm throughout.
