Description

This easy peach compote is ideal for everything from pancakes to ice cream. With just 5 ingredients, this sweet peach sauce can be ready in under 15 minutes.


Ingredients

  • 3 ½ cups diced peaches, discard pits, but don’t peel
  • ¼ cup white granulated sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornflour, optional

Instructions

  1. Combine: In a medium saucepan over medium heat, combine the peaches, sugar, water, lemon juice and cinnamon.
  2. Simmer: Let it come to a boil then adjust the heat as needed to keep it at a low simmer, stirring every so often for about 10 minutes until the peaches are nice and soft and syrupy.
  3. Thicken: If the peaches are extra juicy, combine cornflour with two teaspoons of water and slowly dribble it into the peaches while stirring constantly until you are happy with the thickness.
  4. Finish: Remove from heat, add the vanilla, and allow to cool completely.

Notes

Use very ripe peaches at their peak for best results. White sugar can be swapped for brown sugar or maple syrup. For additional flavor, try adding a slice of fresh ginger or a cinnamon stick while the mixture cooks.
