  • 1 large Delicata squash (about 1.5 lbs)

Instructions

  1. Prepare Squash: Wash and thoroughly dry your delicata squash. No need to peel the thin, edible skin. Carefully slice the squash crosswise into 0.5-inch rings. Use a spoon to scoop out the seeds and stringy bits from each ring, creating neat little circles.
  2. Season Squash: In a large bowl, toss the delicata squash rings with the olive oil, salt, and black pepper until every piece is evenly coated and looks slightly glistening. For a sweeter version, drizzle with maple syrup here.
  3. Roast Squash: Arrange the seasoned delicata squash rings in a single layer on a large baking sheet lined with parchment paper for easy cleanup. Roast at 400°F (200°C) for 10-12 minutes until the edges are golden. Carefully flip each ring. Continue roasting for another 10-13 minutes until they are tender and caramelized. If they look pale after the first flip, give them an extra 5 minutes to get that lovely caramelization.

Notes

Delicata squash skin is edible, so no peeling is needed. Line baking sheet with parchment paper for easy cleanup. For extra caramelization, roast for an additional 5 minutes after flipping if needed.
