Description

This easy cucumber sandwich recipe features thinly sliced cucumbers and a zesty dill-lime green cream cheese spread. Quick to assemble and bursting with garden-fresh flavor, it makes a refreshing and satisfying meal or snack.

Ingredients

  • 1 large English cucumber (about 300g), thinly sliced (1/8-inch thick, for crisp texture)
  • 8 slices soft white sandwich bread (crusts optional, for a classic soft bite)
  • 8 oz (226g) cream cheese, full-fat, softened (for creamy spread base)
  • 0.25 cup (10g) fresh dill, finely chopped (for vibrant, aromatic flavor)
  • 1 Tbsp fresh lime juice (from 1 small lime, for zesty brightness)
  • 0.5 tsp fine sea salt (to enhance flavors)
  • 0.25 tsp black pepper, freshly ground (for a subtle warmth)

Instructions

  1. Prep Cucumbers: Wash and thinly slice 1 large English cucumber (1/8-inch thick). Lay slices on paper towels and pat dry for 5 minutes to remove excess moisture.
  2. Make The Spread: In a medium mixing bowl, combine softened cream cheese, 0.25 cup chopped fresh dill, 1 Tbsp lime juice, 0.5 tsp salt, and 0.25 tsp pepper. Mix until smooth and light green. If the spread is too thin, chill for 15 minutes.
  3. Assemble Sandwiches: Spread an even layer of the dill-lime green spread on one side of each bread slice. Arrange 3-4 cucumber slices neatly on half of the spread bread slices. Top with the remaining spread-side-down bread slices.
  4. Cut And Serve: Using a sharp knife, trim crusts if desired. Cut each sandwich into triangles or fingers. Serve immediately for best crispness and flavor.

Notes

For peak freshness, choose crisp, firm cucumbers and vibrant green dill. Store cream cheese in the fridge, and wrap fresh dill in a damp paper towel in the crisper drawer for longer life. Fresh limes yield the most potent and delicious juice. Regular cream cheese is fine; for a gourmet touch, try mascarpone cheese. If fresh dill is unavailable, 0.5 Tbsp of dried dill can substitute, though fresh is highly recommended. Greek yogurt can substitute cream cheese for a tangier spread.
