Description

Easy, creamy and absolutely delicious white chicken chili recipe cooked low and slow in your crockpot!


Ingredients

  • 1 lb. chicken breasts/thighs (boneless, skinless)
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can cannellini beans (drained)
  • 1 (15 oz.) can great northern beans (drained)
  • 2 tbsp cilantro (fresh, chopped)
  • 2 tbsp lime juice
  • 2 cups chicken broth
  • 1 cup onion (chopped)
  • 3 cloves garlic (minced)
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 8 oz. cream cheese (softened)

Instructions

  1. Step: Add all ingredients to your slow cooker except for the chicken and stir to combine.
  2. Step: Add chicken to the slow cooker and cover with sauce/bean mixture.
  3. Step: Cover and cook on low heat for 7 hours or on high heat for 4 hours.
  4. Step: When done, break up chicken with two forks and stir into the chili. Serve with sour cream and chips!

Notes

Store completely cooled leftover chili in an airtight container in the fridge for up to two days.
