Description
Achieve perfectly crispy skin salmon fillets in a skillet in just minutes. This healthy weeknight meal features a savory and sweet creamy miso-tahini drizzle for an umami-rich flavor profile.
Ingredients
- 2 salmon fillets, skin-on (6–7 oz each)
- 1 tablespoon olive oil
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons white miso paste
- 2 tablespoons tahini
- 1 tablespoon fresh lime juice
- 3–4 tablespoons hot water
- 1 teaspoon pure maple syrup
- 1 teaspoon fresh ginger, grated
- 1 clove garlic, minced
- 1/2 teaspoon toasted sesame oil (optional)
- 1 teaspoon toasted sesame seeds (for garnish)
- 1 large green onion, sliced (for garnish)
Instructions
- Prepare the Salmon Fillets: Pat the salmon fillets completely dry, ensuring all moisture is removed from the skin side. Season both the flesh and skin sides generously with fine sea salt and black pepper.
- Make the Miso-Tahini Drizzle: In a small bowl, combine the white miso paste, tahini, lime juice, maple syrup, grated ginger, minced garlic, and optional sesame oil. Whisk together, then gradually add 3 to 4 tablespoons of hot water until the sauce reaches a smooth, pourable consistency.
- Sear the Salmon: Heat the olive oil in a non-stick or cast-iron skillet over medium-high heat until shimmering hot. Place the salmon fillets skin-side down into the hot pan, pressing down gently on the tops for 30 seconds to prevent curling and ensure full contact with the pan.
- Cook for Crispy Skin: Cook undisturbed for 5 to 7 minutes, or until the skin is deeply golden brown and very crispy. The salmon flesh should change color from translucent to opaque about halfway up the sides.
- Finish Cooking: Carefully flip the fillets using a spatula. Cook for another 2 to 4 minutes on the flesh side, or until the salmon reaches your desired level of doneness (145°F / 63°C internal temperature for medium-rare). Remove from heat and let rest for 2-3 minutes.
- Serve and Garnish: Plate the crispy skin salmon fillets and drizzle generously with the Creamy Miso-Tahini Sauce. Garnish with toasted sesame seeds and thinly sliced green onions.
Notes
To achieve a crispy skin, always ensure the skin is completely dry before adding it to the hot pan. Pressing down on the fillets when you first place them in the skillet prevents the edges from curling. The creamy miso-tahini sauce can be prepared up to three days in advance and stored in the refrigerator; whisk well before serving.
