Ingredients
- 10 oz fresh spinach
- 0.5 cup heavy cream
- 3–4 cloves fresh garlic, minced
- 1 cup cherry tomatoes, halved
- 0.25 cup Parmesan cheese, grated
- 1 Tbsp olive oil
- 0.25 tsp salt
- 0.125 tsp black pepper
Instructions
- Prep Ingredients: Wash and thoroughly dry spinach, halve cherry tomatoes, mince garlic, and grate cheese.
- Saute Aromatics: Heat 1 Tbsp olive oil in a large skillet over medium heat until shimmering. Add minced garlic and sauté until fragrant, about 1-2 minutes (do not brown).
- Wilt Spinach: Add spinach in batches, stirring continuously until fully wilted and reduced in volume. Season lightly with 0.25 tsp salt and 0.125 tsp black pepper.
- Create Cream Sauce: Stir in the heavy cream and grated Parmesan. Bring to a gentle simmer, allowing the sauce to thicken slightly and coat the back of a spoon.
- Add Tomatoes and Finish: Gently fold in the halved cherry tomatoes and cook just until warmed through, about 1-2 minutes, retaining their fresh burst. Taste and adjust seasoning.
Notes
For best results, ensure spinach is very dry before cooking to avoid a watery sauce. If sauce is too thin, simmer longer; if too thick, add a splash of vegetable broth or milk. Use fresh garlic and freshly grated Parmesan for optimal flavor. A pinch of fresh nutmeg can enhance the creamy spinach flavor.
