Description

A comforting and creamy pasta dish with tender beef stew meat, this recipe is perfect for an easy, hands-off dinner. The slow cooker does most of the work, delivering a rich, savory sauce that clings to every piece of pasta.


Ingredients

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 8 ounces pasta (penne or your favorite shape)
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Step: Place the beef stew meat, diced onion, and minced garlic in the slow cooker.
  2. Step: In a bowl, whisk together the cream of mushroom soup, beef broth, heavy cream, dried basil, and dried oregano. Pour this mixture over the beef, onion, and garlic in the slow cooker, stirring to combine.
  3. Step: Cover and cook on low for 6-8 hours, or until the beef is fork-tender.
  4. Step: About 30 minutes before the beef is ready, cook the pasta according to package directions until al dente. Drain the pasta and set it aside.
  5. Step: Stir the cooked pasta into the slow cooker. Add the grated Parmesan cheese, salt, and pepper, mixing well.
  6. Step: Let the mixture cook for an additional 10-15 minutes to allow the flavors to meld.
  7. Step: Garnish with chopped parsley, if desired, and enjoy hot.

Notes
