Description
This creamy salmon recipe Dill-Flecked Coral Swirl is a comforting weeknight meal featuring tender salmon in a rich, velvety dill-infused sauce. It’s designed for maximum flavor with minimal effort, making it a foolproof gourmet-feeling dinner.
Ingredients
- 4 (6 oz/170g each) salmon fillets, fresh or frozen (thawed)
- 1 cup (240ml) heavy cream or half-and-half
- 0.25 cup (10g) fresh dill, chopped
- 2 cloves garlic, minced
- 2 tbsp unsalted butter or olive oil
- 1 tbsp fresh lemon juice
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Prep Salmon: Pat salmon fillets very dry with paper towels. Season generously on both sides with 0.25 tsp salt and 0.125 tsp black pepper.
- Sear Salmon: Heat 1 tbsp unsalted butter or olive oil in a large skillet over medium-high heat until shimmering. Place salmon skin-side down (if applicable) and sear for 3-4 minutes until crispy and golden. Flip and cook for another 2-4 minutes, or until just cooked through and opaque. Remove salmon to a plate and set aside.
- Build Cream Sauce: Reduce heat to medium. Add the remaining 1 tbsp unsalted butter to the same skillet. Sauté minced garlic for 30 seconds until fragrant (do not brown). Pour in 1 cup heavy cream, stirring well. Bring the sauce to a gentle simmer, then stir in the chopped fresh dill and lemon juice. Season with the remaining 0.25 tsp salt and 0.125 tsp pepper to taste.
- Combine & Serve: Return the seared salmon fillets to the skillet, nestling them gently into the warm creamy sauce. Spoon plenty of sauce over the salmon. Warm gently for 1-2 minutes to heat through. Serve immediately.
Notes
For superior taste, choose wild-caught salmon if available. Organic cream can offer a richer, cleaner sauce profile. For a dairy-free option, use full-fat coconut milk or plant-based cream. Full-fat plain Greek yogurt or sour cream can be used for a lighter, tangier sauce. To thicken, stir in a cornstarch slurry (1 tsp cornstarch with 2 tbsp cold water) to the simmering sauce. Flavor boosters include a pinch of smoked paprika, a dash of dry white wine, or fresh chives. Shortcuts include using pre-minced garlic, pre-portioned salmon fillets, or a single oven-safe skillet. Adjust salt to taste if using salted butter or seasoned salmon.
