  • 0.25 cup (60ml) Fresh Parsley
  • 2 tablespoons (30ml) Fresh Chives
  • 1 tablespoon (15ml) Fresh Tarragon
  • 1 clove Garlic
  • 2 tablespoons (30ml) Fresh Lemon Juice
  • 2 tablespoons (30ml) Extra Virgin Olive Oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. Gather Herbs & Garlic: Wash and roughly chop parsley, chives, and tarragon. Peel the garlic clove.
  2. Blend Aromatics: In a food processor, combine chopped herbs, garlic, and 2 Tbsp fresh lemon juice. Pulse until finely minced, adding 0.5 tsp extra lemon juice if too dry.
  3. Add Creamy Foundation: Scrape down the sides. Add 0.5 cup mayonnaise (or Greek yogurt), 2 Tbsp olive oil, 0.25 tsp salt, and 0.25 tsp pepper.
  4. Process Until Smooth: Blend for 60-90 seconds until completely smooth and creamy. Taste and adjust seasoning as needed.

Notes

For best flavor, use crisp, fresh herbs. Consider Greek yogurt for extra protein and tang, or a high-quality vegan mayonnaise for dairy-free versions.
