Description
This Creamy Greek Chicken Flatbread is a quick and flavorful Mediterranean-inspired meal featuring marinated chicken, refreshing tzatziki sauce, and vibrant veggies on warm flatbreads. It’s perfect for a casual dinner or get-together.
Ingredients
- 500g chicken breast, cut into strips
- 2 Tbsp + 1 Tbsp olive oil
- 1 tsp dried oregano
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 1 tsp sea salt, divided
- 0.5 tsp black pepper, divided
- 2 Tbsp + 1 Tbsp lemon juice
- 2 cloves + 1 tsp minced garlic
- 4 large flatbreads (≈8-inch/20cm)
- 200g Greek-style plain yogurt
- 75g cucumber, grated and squeezed dry
- 1 tsp chopped fresh dill
- 1 tsp chopped fresh mint
- 1 medium tomato, thinly sliced
- 0.25 red onion, thinly sliced
- 1 Tbsp extra-virgin olive oil
- 1 tsp sumac (optional)
- 1 Tbsp pomegranate seeds (optional)
- 1 fresh dill sprig
Instructions
- Marinate Chicken: Combine olive oil, oregano, cumin, paprika, salt, pepper, lemon juice, and garlic. Toss with chicken and marinate for 15+ minutes.
- Prepare Tzatziki: Squeeze cucumber dry. Mix with yogurt, lemon juice, dill, mint, salt, garlic. Chill for 10+ minutes.
- Cook Chicken: Cook chicken in a skillet over medium-high heat for 4-5 minutes per side, until cooked through. Rest for 5 minutes.
- Warm Flatbreads: Bake flatbreads at 190°C (375°F) for 4-5 minutes, until warm.
- Assemble Flatbreads: Spread tzatziki on flatbreads, top with chicken, tomato, and onion. Drizzle with olive oil.
- Garnish & Serve: Sprinkle with sumac and pomegranate seeds (optional). Garnish with dill and serve immediately.
Notes
Squeezing excess moisture from the cucumber is crucial for a thick tzatziki. Using full-fat Greek yogurt results in a creamier sauce.
