Description
Outback baked potato soup is a creamy and indulgent copycat recipe that tastes even better than the original! This is the perfect dinner for cozy nights, as it’s easy to customize, and is sure to become a family favorite.
Ingredients
- 4 large russet potatoes (or 8 small potatoes, scrubbed and dried)
- olive oil, for rubbing on potato skins
- 6 strips turkey bacon, cut into small pieces
- 3 tablespoons butter
- 1 medium yellow onion, chopped
- 2–3 large garlic cloves, finely chopped

- 4 cups chicken broth
- 2 cups milk
- â…” cup heavy cream
- 1½ teaspoons salt
- 1 teaspoon ground black pepper
- â…” cup sour cream
- shredded cheddar cheese
- chives, chopped
- extra sour cream
- crispy turkey bacon pieces
Instructions
- Baking: Preheat oven to 400°F (200°C), rub potatoes with oil, prick with a fork, and bake until tender (45-60 minutes), then chop into cubes.
- Sautéing: Heat a large pot over medium heat, cook turkey bacon until crispy, then remove with a slotted spoon and set aside.
- Aromatics: Melt butter in the same pot, sauté chopped onion for 5 minutes, then add minced garlic for 1 minute.
- Thickening: Sprinkle flour over the cooked onions and garlic, stir to coat, and cook for 2 minutes.
- Simmering: Gradually whisk in chicken broth, milk, and heavy cream; bring to a simmer.
- Combining: Add chopped baked potatoes to the pot, bring back to a simmer, then reduce heat to low and simmer for 10 minutes.
- Finishing: Stir in salt, pepper, sour cream, and half of the cooked turkey bacon; heat through until combined.
- Serving: Ladle soup into bowls and garnish with shredded cheddar cheese, chopped chives, extra sour cream, and reserved turkey bacon.
Notes
Fully bake the potatoes in the oven and remove skins before adding to the soup. Cook turkey bacon until really crispy for best flavor. Do not simmer the soup for more than 10 minutes to prevent the texture from becoming grainy. An immersion blender can be used to purée the soup to your preferred thickness.
