Description

These Ruby Citrus Crowned cranberry orange muffins are a comforting and bright breakfast treat, filling the kitchen with a warm, sweet citrus aroma. This simple, family-friendly recipe is perfect for busy mornings and a quick, delightful snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 Tbsp baking powder
  • 0.5 tsp salt
  • 1 large orange, zest
  • 0.25 cup orange juice
  • 1 large egg
  • 0.5 cup whole milk (or buttermilk for a richer crumb)
  • 0.25 cup unsalted butter, melted (or neutral oil if preferred)
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat Oven & Prep Pan: Preheat your oven to 375F (190C). Line a standard 12-cup muffin tin with paper liners or grease it well.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until thoroughly combined.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk the melted butter, egg, milk, orange zest, orange juice, and vanilla extract until smooth and fully blended.
  4. Mix Batter: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula, just until combined; do not overmix.
  5. Fold in Cranberries: Gently fold in the cranberries until evenly distributed.
  6. Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake: Bake for 18-22 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
  8. Cool: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Avoid overmixing the batter to prevent tough muffins. If cranberries tend to sink, toss them lightly with a tablespoon of flour before folding into the batter. For extra crunch, sprinkle coarse sugar on top before baking. Frozen cranberries can be used directly from the freezer.
