Ingredients

  • 1 cup fresh grated coconut (90g, packed)
  • 23 medium green chilies, to taste
  • 1012 fresh curry leaves
  • 1 inch fresh ginger (about 1 Tbsp, 10g), peeled and roughly chopped
  • 23 cloves garlic (about 1 Tbsp, 10g), peeled
  • 1 tsp tamarind paste (5ml)
  • 0.5 tsp mustard seeds (2.5ml)
  • 1 tsp urad dal (split black gram) (5g)
  • 1 Tbsp oil (15ml), unrefined coconut oil recommended
  • 0.5 tsp salt (2.5g), or to taste
  • 0.250.5 cup water (60-120ml)

Instructions

  1. Gather And Prep: Roughly chop green chilies, ginger, and garlic, ensuring uniform pieces for blending. Grate fresh coconut or soak desiccated in warm water for 15 minutes until soft.
  2. Blend The Chutney: In a blender, combine the grated coconut, prepped green chilies, ginger, garlic, tamarind paste, and salt with 0.25 cup water. Grind to a coarse or smooth paste, adding 1-2 tablespoons more water bit by bit if needed.
  3. Prepare The Tempering: Heat 1 tablespoon of oil in a small pan over medium heat until it shimmers. Add mustard seeds and let them splutter completely for about 30 seconds. Then add urad dal and fry until light golden brown (1 minute). Finally, toss in the curry leaves and a pinch of asafoetida (if using), cooking for a few seconds until wonderfully fragrant and crisp.
  4. Combine And Serve: Pour the hot tempering mixture directly over your freshly blended coconut chutney. Stir gently to combine, allowing the flavors to meld. Serve immediately.

Notes

For a lighter version, reduce tempering oil to just a teaspoon. Adjust green chili quantity to control heat. Don’t over-grind the chutney; a little texture is lovely. Ensure mustard seeds splutter completely for optimal flavor, but don’t burn them. A pinch of asafoetida or jaggery/sugar can enhance flavor or mellow heat.
