Description
If you love the Chicken Gnocchi Soup at Olive Garden, you’ll love my copycat version! It’s creamy, rich, easy to make, and even better than the original.
Ingredients
- 4 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 ribs celery, diced
- â…“ cup all-purpose flour
- 5 cups chicken broth
- 1 large chicken breast, diced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon dried thyme
- 1 (16-ounce) package gnocchi
- 1 cup carrots, shredded
- 1 cup spinach leaves
- 1 cup heavy cream
- salt and pepper to taste
Instructions
- Step: Heat the olive oil in a large pot over medium heat. Cook the onions, garlic, and celery for 4-5 minutes until softened.
- Step: Stir in the flour until evenly mixed throughout.
- Step: While stirring constantly, pour in the chicken stock. Add the chicken breast, Italian seasoning, and thyme, and bring to a boil. Reduce to a simmer, then stir in the gnocchi. Cook for 3-4 minutes until the gnocchi is cooked through.
- Step: Stir in the carrots, spinach, and heavy cream. Bring to a gentle simmer and cook for another 1-2 minutes. Season to taste with salt and pepper. Enjoy!
