This recipe delivers a juicy, flavorful smashburger experience with sweet caramelized onions and a creamy herbed aioli. It’s a restaurant-quality burger you can easily make at home.
Ingredients
- 500g (1lb 2oz) Ground Beef (80% Lean)
- 8oz (225g) Sharp Cheddar Cheese, Sliced
- 4 x 100g (3 ½oz) Brioche Buns, Split
- 2 Large Onions, Thinly Sliced
- 2 tbsp (30ml) Olive Oil
- 1 tbsp (15ml) Unsalted Butter
- 2 tsp (10g) Kosher Salt
- 1 tsp (5g) Freshly Ground Black Pepper
- 1 tsp (5g) Smoked Paprika
- ½ cup (120ml) Vegan Mayo
- 1 Clove Garlic, Minced
- 1 tsp (5ml) Lemon Juice
- ½ tsp (2g) Dried Dill
- 4 Leaf Lettuce
- 4 Thin Slices Tomato
- 8 Pickle Chips
- 1 tbsp (15g) Chopped Fresh Chives
Instructions
- Caramelize Onions: Thinly slice onions and cook in olive oil with salt over medium-low heat for 10-12 minutes, stirring occasionally, until golden and sweet.
- Make Aioli: Combine vegan mayo, smoked paprika, garlic, lemon juice, and dill; whisk until smooth and refrigerate for 30 minutes.
- Season Beef: Gently mix ground beef with salt and pepper. Divide into 4 portions and loosely form into balls.
- Smash Patties: Heat skillet and oil. Place beef balls in skillet and smash into thin patties.
- Sear & Melt: Season patties, cook for 2-3 minutes, flip, top with cheese, and cook for 1-2 minutes until melted.
- Toast Buns: Melt butter and toast buns until golden brown.
- Assemble Burger: Spread aioli on bun, layer with lettuce, tomato, patty, onions, and pickles. Garnish with chives.
Notes
For best results, use 80/20 ground beef and don’t overmix it. Allow the aioli to chill for at least 30 minutes to allow flavors to meld.
