  • Zest of 1 Lime (≈1 tsp): Intensifies citrus aroma.
  • 8 Small Corn Tortillas (≈6cm diameter): For serving.

  • ¼ cup (60ml) Sour Cream Mixed with 1 tsp (5ml) Sriracha: Spicy drizzle.
  • 1 Avocado, Thinly Sliced: Adds creamy richness.
  • 1 Radish, Thinly Sliced into Rounds: Adds peppery bite.
  • Optional: ¼ cup (60ml) Pickled Red Onion: Adds tangy flavor.

Instructions

  1. Marinate Shrimp: Toss shrimp with lime zest, chipotle powder, cumin, paprika, salt, and pepper; let sit for 10-30 minutes.
  2. Sauté Garlic: Sauté minced garlic in olive oil for 30 seconds until fragrant.
  3. Cook Shrimp: Add shrimp to skillet and cook for 2-3 minutes per side, until pink and opaque; squeeze lime juice over shrimp.
  4. Warm Tortillas: Warm tortillas in a dry skillet or microwave.
  5. Prepare Slaw: Toss red cabbage with apple cider vinegar, sugar, and salt.
  6. Assemble Tacos: Layer slaw, mango, shrimp, avocado, radish, cilantro, and queso fresco on tortillas.
  7. Finish & Garnish: Drizzle with sriracha sour cream and garnish with shrimp.

Notes

For best results, pat shrimp dry before marinating. Warming tortillas enhances their flavor and pliability. Adjust sriracha to your spice preference.
