Ingredients
- 1 pound pecan halves
- 20 ounces chocolate (dark, milk, or white)
- 1 teaspoon kosher or sea salt
- Optional add-ins: 1 teaspoon cinnamon, 2 tablespoons caramel drizzle, ½ teaspoon pumpkin spice
Instructions
- Toast the pecans: Preheat oven to 350°F. Spread pecans on a baking sheet and toast 5–7 minutes until fragrant. Cool completely.
- Melt the chocolate: Place chopped chocolate or almond bark in a microwave-safe bowl. Heat in 30-second bursts, stirring until smooth. Or use a double boiler.
- Dip the pecans: Add pecans into melted chocolate, stir to coat, and remove with a fork or spoon. Let excess drip off.
- Set the pecans: Place on parchment or wax paper. Sprinkle with salt or cinnamon if desired. Harden at room temperature 30–45 minutes.
- Crockpot method: Line slow cooker with parchment. Layer pecans and chocolate. Heat on low 1 hour, stirring occasionally. Scoop clusters onto parchment to set.

- Roasted pecans give crunch; raw pecans are softer.
- Use vegan dark chocolate for dairy-free or sugar-free chocolate for keto.
