Description
This recipe creates elegant chocolate-covered cherries with glossy shells and ruby centers, a perfect family-friendly project for a gourmet treat at home.
Ingredients
- 1 lb sweet dark cherries, fresh or frozen (thawed and patted dry)
- 10 oz dark or semi-sweet chocolate, chopped
- 1 tsp coconut oil
- 0.5 tsp vanilla extract
- Pinch flaky sea salt, (optional)
- Few drops almond extract, (optional)
- Hint orange zest, (optional)
Instructions
- Prepare Cherries: Gently wash and thoroughly dry your fresh cherries, leaving stems on if you like for an elegant presentation. If using frozen cherries, thaw them completely and pat them very dry with paper towels; this prevents chocolate seizing.
- Melt Chocolate: In a microwave-safe bowl, combine chopped chocolate and coconut oil. Microwave in short bursts of 30 seconds, stirring thoroughly after each until smooth and glossy. You want it fluid but not hot to the touch (Temp: ~90°F / 32°C).
- Dip Cherries: Holding a cherry by its stem, submerge it fully into the melted chocolate, coating evenly. Lift and let any excess chocolate drip back into the bowl for about 10 seconds, ensuring a thin, smooth coat on your chocolate covered cherries.
- Set And Chill: Place each dipped cherry onto a parchment paper-lined baking sheet. Refrigerate for 15-30 minutes until the chocolate is firm, shiny, and completely set.
Notes
For a healthier dessert, use 70% or higher dark chocolate to reduce sugar and boost antioxidants. Ensure cherries are completely dry before dipping to prevent the chocolate from seizing or not adhering properly. Do not rush the chilling process; adequate refrigeration ensures a hard, glossy shell and prevents blooming. If chocolate appears thick or gritty from overheating, add a tiny bit more coconut oil and stir vigorously. Substitutions include using vegetable shortening for coconut oil, milk or white chocolate, or well-drained maraschino or plump dried cherries. Flavor boosters like flaky sea salt, almond extract, or orange zest can be added to the melted chocolate.
