Description

This Chimichurri Sauce is a vibrant, zesty, garlicky, herb-packed condiment that comes together in mere minutes. It brings a fresh aroma and elevates any dish, making it a versatile staple for countless meals.

Ingredients

  • 1 cup fresh flat-leaf parsley, packed
  • 0.5 cup fresh cilantro, packed
  • 4 cloves garlic, peeled and finely minced
  • 0.25 cup red wine vinegar
  • 0.5 cup extra virgin olive oil
  • 0.5 teaspoon red pepper flakes, or to taste
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper, freshly ground

Instructions

  1. Prep Herbs: Wash and thoroughly pat dry 1 cup parsley and 0.5 cup cilantro to ensure vibrant color and prevent a watery sauce. Roughly chop them.
  2. Mince Garlic: Finely mince 4 cloves garlic until almost a paste, releasing its pungent aroma.
  3. Combine All Ingredients: In a food processor, combine all prepped herbs, minced garlic, 0.5 teaspoon red pepper flakes, 0.25 cup red wine vinegar, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Pulse briefly (5-10 seconds) to start mixing them.
  4. Slowly Add Oil: With the processor running low, slowly drizzle in 0.5 cup extra virgin olive oil. Process for 30-45 seconds until combined and chunky; avoid over-processing.
  5. Adjust and Rest: Transfer to a bowl. Taste and adjust salt, pepper, or vinegar as needed for perfect balance. Let the sauce rest 15 minutes for flavors to meld.

Notes

Store prepared sauce in an airtight container in the fridge for up to 1 week. For a healthier twist, use organic herbs and adjust salt to preference. White wine vinegar can substitute red wine vinegar. If the sauce ends up too oily, add a splash more vinegar; if too chunky, process for a few more seconds; if too thin, stir in a few more finely chopped fresh herbs.
