Description
This recipe for homemade Chicken Satay Skewers features tender chicken marinated in ginger and lemongrass, served with a rich, creamy peanut dip. It’s a family-friendly, restaurant-quality dish perfect for a vibrant weeknight meal.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 0.5 cup natural peanut butter
- 0.375 cup low-sodium soy sauce
- 3 Tbsp fresh lime juice
- 1 Tbsp minced ginger
- 2 cloves garlic, minced
- 1 tsp brown sugar
- 1 tsp honey
- 2 Tbsp warm water
- Wooden skewers, pre-soaked
Instructions
- Marinate Chicken: Cut chicken into bite-sized strips. Whisk together 0.25 cup low-sodium soy sauce, 2 Tbsp fresh lime juice, 1 Tbsp minced ginger, 2 minced garlic cloves, and 1 tsp brown sugar. Add chicken, ensuring it’s well coated. Marinate for 30 minutes or up to 4 hours.
- Skewer Chicken: Thread marinated chicken onto pre-soaked wooden skewers, spacing pieces evenly (about 6-8 per skewer).
- Cook Skewers: Heat a 10-inch skillet or grill to medium-high. Cook skewers 3-4 minutes per side until golden brown and cooked through (165F (74C)), lowering heat if browning too fast.
- Make Peanut Dip: Whisk together 0.5 cup natural peanut butter, 2 Tbsp soy sauce, 1 Tbsp lime juice, 2 Tbsp warm water, and 1 tsp honey. Add more water to thin if needed until smooth and creamy.
Notes
Soak wooden skewers for 30 minutes prior to use to prevent burning. When cooking, avoid overcrowding the pan and adjust heat if chicken browns too quickly to ensure even cooking. Marinate chicken for a minimum of 30 minutes for best flavor.
