Ingredients
- 450 g boneless, skinless chicken thighs, cut into small pieces
- 1 medium yellow onion, finely diced

- 2 L low-sodium chicken broth

- 250 g wide egg noodles
- 1/4 cup fresh lime juice
- zest of 1 large lime
- 2 cups packed cilantro leaves
- 1/2 cup extra virgin olive oil
Instructions
- Sear Chicken Thighs: Heat 1 tbsp olive oil in a large pot. Add diced chicken thighs and cook for 5-7 minutes until lightly browned. Remove chicken from the pot and set aside.
- Sauté Vegetables and Aromatics: Add diced onion, carrots, and celery to the pot. Cook for 8-10 minutes until softened, then add minced garlic and grated ginger, cooking for 1 minute until fragrant.
- Simmer Soup Base: Pour in chicken broth and return the seared chicken to the pot. Bring the mixture to a simmer, then reduce heat, cover, and let simmer for 15 minutes.
- Cook Noodles and Season: Increase heat to bring the soup to a boil. Add wide egg noodles and cook for 8-10 minutes until al dente. Stir in salt and pepper, adjusting seasoning to taste.
- Prepare Cilantro-Lime Infusion: Combine lime juice, lime zest, cilantro leaves, and 1/2 cup extra virgin olive oil in a blender or food processor. Blend until completely smooth and vibrant green.
- Serve with Infusion Drizzle: Ladle the hot soup into bowls. Drizzle 1-2 tablespoons of the fresh Cilantro-Lime Infusion over each serving.
Notes
Store cooked noodles and soup base separately to prevent noodles from absorbing liquid during storage. Use chicken thighs for best flavor, or substitute chicken breast by reducing simmering time. The infusion can be made ahead and stored separately for up to 5 days.
