  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 cup shelled pistachios, unsalted
  • 0.25 cup golden raisins
  • 0.25 cup pomegranate arils

Instructions

  1. Prep the Greens: Preheat your oven to 160 degrees C (325 degrees F). Spread shelled pistachios on a small baking sheet; toast for 5-7 minutes until fragrant and lightly golden. Let them cool. Wash and dry kale thoroughly, remove stems, and chop finely. Shred the green cabbage.
  2. Whisk the Dressing: In a small bowl, whisk together the remaining 55 ml (0.25 cup minus 1 teaspoon) olive oil, lemon juice, orange juice, white balsamic vinegar, honey, Dijon, garlic, dill, parsley, oregano, salt, and pepper. Whisk until well combined and creamy.
  3. Combine and Massage: In a large bowl, combine kale and cabbage. Drizzle 5 ml (1 teaspoon) olive oil over greens. Gently massage the kale for 2-3 minutes; feel it soften and reduce in volume, becoming tender.
  4. Add Toppings and Serve: Stir in the cooled pistachios and golden raisins. Pour the Mediterranean Citrus & Herb Vinaigrette over the salad; toss gently to coat everything evenly. Serve immediately, garnished with fresh pomegranate arils and extra dill.

Notes

If the kale feels too stiff after massaging, continue for another minute until it is tender. For a low-carb option, use a sugar-free sweetener in place of honey. For a nut-free version, substitute toasted sunflower or pumpkin seeds for pistachios.
