  • 0.5 cup piloncillo or brown sugar
  • 1 (90g) tablet Mexican chocolate (such as Ibarra or Abuelita)
  • 1 (3-inch) cinnamon stick
  • 4 cups water or milk (whole milk for extra richness)

Instructions

  1. Dissolve Masa Harina: Whisk 0.5 cup masa harina with 1 cup (240ml) cold water in a bowl until completely smooth, ensuring no lumps remain. Set aside.
  2. Melt Chocolate And Sugar: In a medium (3-quart/2.8L) saucepan, combine 3 cups (710ml) water or milk, the piloncillo, and cinnamon stick. Heat over medium heat, stirring occasionally, for 5-7 minutes until the piloncillo melts and the chocolate is fully dissolved.
  3. Thicken The Atole: Slowly whisk the masa harina mixture into the hot chocolate liquid. Continue stirring constantly over medium heat for 10-15 minutes until the mixture gradually thickens to your desired consistency, coating the back of a spoon.
