Description
This easy cashew cream recipe features a silky base with a vibrant roasted red pepper swirl, perfect for adding plant-based goodness to family meals as a dip or pasta sauce. It’s a quick, family-friendly, and healthy option for busy evenings.
Ingredients
- 1 cup (140 g) raw cashews, unroasted, unsalted
- 0.5 cup (120 ml) filtered water, plus more for soaking
- 1 tablespoon (15 ml) fresh lemon juice
- 0.5 teaspoon fine sea salt, to taste
- 0.5 cup (100 g) drained jarred roasted red peppers
- 1 small peeled garlic clove, (optional flavor booster)
- 1 tablespoon nutritional yeast, (optional flavor booster)
- 0.5 teaspoon smoked paprika, (optional flavor booster)
Instructions
- Soak the Cashews: Place 1 cup raw cashews in a bowl, cover with hot water. Soak 30 minutes to 2 hours, until plump and soft (for faster prep, boil 10-15 minutes).
- Drain and Rinse: Drain cashews thoroughly using a fine-mesh sieve. Rinse under cold water for about 30 seconds.
- Blend the Base Cream: Transfer cashews to a high-speed blender with 0.5 cup filtered water, 1 tablespoon lemon juice, and 0.5 teaspoon salt. Blend on high for 2-4 minutes, scraping sides, until incredibly smooth and creamy like thick yogurt.
- Create the Roasted Red Pepper Swirl: Remove about 1.5 cups plain cashew cream to a separate bowl. Add the drained 0.5 cup roasted red peppers and optional smoked paprika to the remaining 0.5 cup cream in the blender. Blend until completely smooth and vibrant orange-red.
- Assemble and Serve: In a serving bowl, layer the plain and red pepper cashew creams. Gently swirl them together with a knife for a beautiful marbled effect. Enjoy this versatile recipe!
Notes
For faster prep, boil cashews for 10-15 minutes instead of soaking for 30 minutes to 2 hours. Use jarred roasted red peppers to save time and drain them well. If the cream stays grainy, continue blending, adding more water 1 tablespoon at a time if too thick. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
