  • 0.5 teaspoon smoked paprika, (optional flavor booster)

Instructions

  1. Soak the Cashews: Place 1 cup raw cashews in a bowl, cover with hot water. Soak 30 minutes to 2 hours, until plump and soft (for faster prep, boil 10-15 minutes).
  2. Drain and Rinse: Drain cashews thoroughly using a fine-mesh sieve. Rinse under cold water for about 30 seconds.
  3. Blend the Base Cream: Transfer cashews to a high-speed blender with 0.5 cup filtered water, 1 tablespoon lemon juice, and 0.5 teaspoon salt. Blend on high for 2-4 minutes, scraping sides, until incredibly smooth and creamy like thick yogurt.
  4. Create the Roasted Red Pepper Swirl: Remove about 1.5 cups plain cashew cream to a separate bowl. Add the drained 0.5 cup roasted red peppers and optional smoked paprika to the remaining 0.5 cup cream in the blender. Blend until completely smooth and vibrant orange-red.
