Ingredients

  • 2 cups (300 g) Medjool dates, pitted
  • 0.5 cup (120 ml) water, plus more for soaking
  • 1 tsp pure vanilla extract

Instructions

  1. Soak Dates: Place 2 cups (300 g) pitted Medjool dates into a bowl. Cover them fully with hot water and let them sit for 10-15 minutes, until they feel noticeably soft. Drain them very well once softened; they should be plump.
  2. Combine Ingredients: Transfer the softened dates to a small, heavy-bottomed saucepan. Add 0.5 cup (120 ml) fresh water, 1 tsp pure vanilla extract, and a tiny pinch of sea salt.
  3. Cook to Thicken: Bring the mixture to a gentle simmer over medium-low heat. Stir frequently, gently mashing the dates with the back of a spoon as they break down. Continue simmering for 15-20 minutes, or until the dates are very soft and the mixture thickens beautifully, coating the spoon like a jam. If it looks too dry and starts sticking, splash in 1-2 tablespoons of water.
  4. Blend to Smoothness: Remove the saucepan from the heat. For a silky-smooth spread, transfer the mixture to a food processor or use an immersion blender until it is creamy and uniform. For a chunkier texture, mash thoroughly by hand with a fork.
  5. Cool and Store: Allow the finished spread to cool completely to room temperature. It will thicken further as it cools. Once cool, transfer it to a clean, airtight jar.

Notes

Avoid high heat during cooking to prevent scorching the natural sugars. Ensure all date pits are meticulously removed before cooking. For a thicker, lower-carb spread, use less water during cooking.
