Description

Our Amber Salted Butter Drip Caramel Icing recipe is your ticket to bakery-quality magic right at home. This perfectly balanced sweet and salty experience transforms any dessert with its stunning amber color and elegant drip.

Ingredients

  • 1 cup (200g) granulated sugar
  • 8 tablespoons (113g) unsalted butter, cut into pieces
  • 0.5 cup (120ml) heavy cream, warmed
  • 1 teaspoon (5ml) vanilla extract
  • 0.5 teaspoon (3g) flaky sea salt

Instructions

  1. Prepare Pan: Lightly grease a heavy-bottomed 3-quart saucepan. Have all ingredients measured and ready.
  2. Caramelize Sugar: Pour 1 cup (200g) granulated sugar into the saucepan. Melt the sugar over medium-low heat for 8-12 minutes, stirring occasionally. It will clump, then melt into a beautiful, clear amber liquid. Watch closely! The goal is a clear, deep golden-amber liquid, with no undissolved granules.
  3. Add Butter: Carefully whisk in the 8 tablespoons (113g) of cut unsalted butter until fully melted and smooth, about 1-2 minutes. Be gentle, as it will bubble vigorously.
  4. Incorporate Cream And Salt: Slowly pour in the 0.5 cup (120ml) of warm heavy cream, whisking constantly for 3-5 minutes. Add the 0.5 teaspoon (3g) of flaky sea salt. Bring to a gentle simmer, stirring until slightly thickened and coats the back of a spoon. If it looks too thin after simmering, continue to cook for another minute or two, watching carefully to ensure it doesn’t overthicken.
  5. Stir In Vanilla: Remove from heat and stir in the 1 teaspoon (5ml) of vanilla extract.
  6. Cool And Serve: Let cool slightly for 10-15 minutes before using as a drip, or cool completely to thicken into a spreadable icing.

Notes

For quick setup, consider pre-measured ingredient packets. Avoid constant stirring during initial sugar caramelization to prevent crystallization. Warm cream gently, do not overheat. Remove from heat immediately if caramel gets too dark or smells acrid.
